Cabbage Masala

What do you do when you have extra cabbage? I make up a cabbage salad. Oriental flavors, different textures, tasty goodness. I am in Uganda right now and they have groundnuts, which are peanuts, so threw those in, too.

6c            shredded cabbage

2c            carrots, match stick

1c            apples, diced

1/2c       peanuts (or groundnuts)

3T           green pepper, small diced

2T           peanut butter (or g-nut paste)

2T           sesame oil

2T           coconut aminos (or soy sauce)

1/4c       oil (sunflower seed)

1/2t        masala seasoning

In large bowl combine 6c cabbage shredded, 2c carrots match stick, 1c apples diced, 1/2c peanuts (or roasted groundnuts), and 3T green pepper small diced.

In separate bowl whisk mix together 2T peanut butter (or g-nut paste), 2T sesame oil, and 2T soy sauce. Add 1/2t masala seasoning then drizzle in 1/4c oil (I used sunflower) as you whisk.

Pour dressing onto vegetables, mixing well. Cover and refrigerate for 30 minutes minimum. The longer it sits, the better the flavor gets.

If you are making this a day ahead of time, stir it when you go to bed and again when you get up.

To serve, mix it up once more and enjoy.
